When you place a bet with the bartender the same rules apply as for bartenders choice. The goal for the bar is to never create the same drink twice in one evening. It certainly is a risk which is exactly what makes roulette fun. You just never know what you might get. Solves the problem of not knowing what you want. Just do it. Give your choice over to chance. Between all the cocktails available in the world and the custom ones there is certainly more variety than the 37 or 38 slots on a roulette wheel.
